Sunflower Butter Protein Energy Bites

These high protein energy balls are perfect for after a workout, a team sports snack, or for after school. Keep in the freezer. I add collagen to boost the protein for post-workout repair.





Ingredients

1 cup oats

2/3 cup coconut flakes

3/4 cup sunflower butter

1/2 cup ground flax seed

1/4 cup ground chia seeds

1/4 cup maple syrup

1 tsp. vanilla

1/2 tsp. salt


Method

Stir all ingredients together in a medium bowl or kitchen mixer, sprinkling in collagen powder at the end, until thoroughly mixed. Let chill in the refrigerator for 30+ minutes. Once chilled, roll into balls. Store in an airtight container in the freezer.


Makes about 30 bites.
